Unravel the secret techniques behind the Khmer grill and you’ll be a grillmaster yourself in no time. You’ll find that there’s much more to grilling in this part of the world than meets the eye. Your instructor, a local food enthusiast, Thea Kun has learned the best techniques through observation over many, many years. She not only cooks for her family, but as her profession too - and now she loves being able to teach these skills to tourists and locals alike. Cooking is an extremely important skill in Cambodia and now you can get right in there with the locals and prepare a meal just as delicious.
Sure, you’ll get to eat plenty of food in this class - but the real takeaway will be the opportunity to learn how to grill like a true Cambodian local. As the Chinese proverb goes, “you give a poor man a fish and you feed him for a day. You teach him to fish and you give him fish for life.” What better food to have for life than Cambodian grilling! Some of the these techniques that you’ll be learning from Thea Kun will include packing the fish with clay or banana leaves, and mixing them with the fresh Khmer herbs. These techniques may be new and innovative to you, but you’ll learn that they have been passed down over many, many years. Packing the fish is a technique Thea learned from her father; he believed this held the essential flavor of the fish longer, thus making it more tasty when served. Included in this experience is also the opportunity to learn about grilled pork ribs and grilled beef. You will also learn to make the legendary green mango sauce that all Khmers absolutely love! You’ll certainly want to jar some up and bring it home with you to be used as a dip, marinade, or just to eat it on its own -- it’s that good!
